Walnuts Spread Filled Vegetable Rolls

Cute little vegan vegetable rolls filled with walnuts spread

  • 2 carrots, peeled
  • 2 cucumbers
  • 1 kohlrabi, peeled
  • ½ cup walnuts
  • ¼ cup olive oil
  • ½ tea spoon salt
  • 1 minced garlic clove (optional)
  • Toothpicks

  1. Make the walnut spread:
  2. Place all the spread ingredients (1/2 cup walnuts, ¼ cup olive oil, ½ tea spoon salt, 1 minced garlic clove (optional)) in a blender and process until a thick spread is formed.
  3. Make the rolls:
  4. Use a mandoline slicer to slice all the vegetables to thin slices. The key here is to slice them as thinly as possible, to make them roll more easily. The cucumbers roll more easily than the carrots and kohlrabi BTW, but all eventually do roll.
  5. Spread the walnuts spread on the vegetable slices and roll them, close with a toothpick.
  6. Another option is to cut the slices and place them on top of each other creating cute little "sandwiches" with mixed vegetables (see picture above in post).
