Za'atar Flavored Crackers (Vegan + Gluten Free)

Fresh homemade tasty za'atar and cashew cheese Crackers, which are also vegan and gluten free

  • ½ cup corn flour (100 g)
  • ½ cup rice flour (70 g)
  • ½ cup cashew nuts
  • ¼ cup water (plus more for soaking)
  • ½ tea spoon salt
  • 4 table spoons almond butter
  • 4 table spoons olive oil
  • 4 table spoons za'atar spice mix

  1. Soak the cashew nuts in boiled water for 10 minutes. Drain from water and place in the blender with the ¼ cup water and ½ tea spoon salt until it reaches a smooth cream cheese like texture.
  2. Mix in one bowl the dry ingredients: ½ cup corn flour, ½ cup rice flour, and 4 table spoons za'atar spice mix.
  3. Mix in a separate bowl the wet ingredients: the cashew cheese, 4 table spoons almond butter, and 4 table spoons olive oil.
  4. Combine the wet into the dry, mix a bit and start working with your hands to knead the dough until all is combined, and create a ball from it. Place the dough on a piece of parchment paper, place a second piece of parchment paper on the dough, working from the center of the dough out, roll the dough into a rectangle roughly ⅛-inch thick or thinner. Using a pizza cutter or a sharp knife, cut the dough into individual crackers roughly 1-inch by 2-inches. Alternatively, cut the crackers into squares, diamonds, or use cookie cutters.
  5. Bake in an oven pre-heated to 170 C for about 20 minutes (until you see the edges start to brown). Take out of the oven, and let cool. The crackers will crisp further as they cool. Store the crackers in an airtight container on the counter.
