A few months back there was a big hype on the Israeli media when a famous singer was interviewed, and one of the things he was telling is that he just had a new baby, however he obviously does not change diapers or feed her as it is the wife’s role to do that (*this is not an exact quote, just my vague memory of it). Everyone talked about it that week, not only online, but in family dinners also. So when we sat down to eat a Friday’s dinner with my (extended) family, when I raised the subject, they chose to tease on purpose and basically reinforce what that singer said, well, just for the fun of the argument.

And me? well, instead of being the mature one and let the subject go, I chose to argue with them, although honestly I should know by now to just let it go, as arguing is really what keeps them going, just like any good teasing…

Now seriously, we should all be doing what works best for us in our homes and lives, and i’m really not striving to define the woman’s “role” in life, it’s that the mere idea that a woman has a pre-defined woman simply because of her gender, and that someone famous that obviously many people listen to what he has to say feels comfortable enough defining it this way, it makes me mad.

So, going back to our dinner table, we started arguing about women’s role in the house (and just to give you a bit of background, in our dinner table there were 2 woman engineers and one woman architect, plus 3 husbands that de-facto do everything at home, ok?), and then my brother says: “what are you saying, you own a recipes blog, and I won’t be any bit surprised if i’ll find out that Rafi is actually hiding in the toilet from time to time and adding comments from fake profiles on your blog asking for more Russian recipes from his mama’s house!” So true, I did share some Russian recipes already, but it is simply because of my in laws being such talented cooks and everything there tastes so good so a great basis for sharing here, but today, to follow up on that discussion, you’ll find a recipe for something that there’s absolutely no chance Rafi will touch (well, since it is white and creamy, don’t even try to understand this wierdow’s culinary choices..), well, sweet revenge it is 🙂 .

These are mung beans patties, that are served on a creamy tasty cauliflower crem. The cream is optional, as you can also have these with tahini, tomatoes, pesto, or any other gravy of your choice, but it goes really well with this one, and the plus with it, that if you have leftovers (like I did), they are great as a simple puree to give a young baby, with or without other vegetables.

Served with love to my family, which is always interesting to be around.

Juicy and healthy mung beans patties, served over delicious cauliflower cream

  • For the patties:
  • One cup dried mung beans
  • 1 small tomato
  • 1 batch coriander
  • ½ tea spoon salt
  • pepper to taste
  • ½ tea spoon smoked paprike
  • ½ tea spoon cumin
  • 10 table spoons chickpeas flour (or other flour)
  • For the cauliflower cream:
  • ½ whole big cauliflower head
  • 5 table spoons olive oil
  • ½ tea spoon salt
  • ¼ tea spoon nutmeg

  1. Make the cauliflower cream (it is better to be ready before the patties are so you can serve the patties on it while they are still warm): cook the cauliflower in water until it is soft (check that a fork can easily cut through it), chill it for a few minutes, and blend using a hand blender together with the olive oil, nutmeg and salt until it is creamy and smooth.
  2. Make the patties: soak the mung beans in water for about 12 hours. I sprout them as well, which simply means drain the water, and lives in a sieve over an empty bowl, and wash them under water twice a day (and drain). After a day or two (depending how long you want your sprouts) they are ready to use. This recipe does not require sprouted beans (just soaked), however it does raise their nutritional values tremendously with very little work involved (I made myself a habit of sprouting mung beans and lentils at least once week, this way I always have ready sprouts around for salads, patties, and more). Place the mung beans (either sprouted or just soaked) in a food processor along with all other patties ingredients, and process in pulses until it is well combined (start with half tomato, and add more as needed, to avoid too much moisture in the mix). You may need to stop the food processor and scrape it's sides using a spatula.
  3. Place the patties mix in a bowl ,and add flour as needed until the mix is workable to create patties with your hands (I ended up adding about 10 chickpea flour table spoons, it depends on how fresh the tomato is, etc.) The mix may seem a bit too moist to you, but that's actually what will help the patties stay juicy on the inside.
  4. Warm a large non-stick skillet with ½ tea spoon oil in it, when it is warm enough add the patties, use a spatula to press them flat against the skillet (see picture above), reduce the heat a bit, and fry the patties until they brown on both sides (about 3 minutes on each side).
  5. Serve warm over the cauliflower cream.

What is a “batch” of coriander? What measurement?

If you squeeze it into a cup it is about 1/2 a cup (it’s the amount seen in the picture above)
