Za’atar Flavored Crackers (Vegan + Gluten Free)

When I was younger my dream job was being a copywriter. Its not that I had a real clue what copywriters actually do on a day to day basis, but in my mind, being a copywriter meant dealing with words (something I am very fond of..), creating inventions, help to spark feelings in people, and also being surrounded by very creative co-workers (which must be a nice thing).

I remember thinking to myself, while visiting my older sister (almost 9 years between us) in her place of work (high tech): “How can you work in such a grey place? Everyone sit in their identical grey cubicles, each looking at their computer screen. There must be no one here who is creative, it’s not interesting, very grey, i’ll never want to work in such a place..”.

Today, many years after I visited her in that building, I work for the same company, and after almost 10 years there, I can say what I thought to myself back than was as far from the truth as possible (perhaps except for the grey cubicles, still some work needed on them, although they are not grey in some of the buildings anymore 🙂 ).

Apart from the fact that I come to work everyday in a place that respects me and my opinions, where I deal with interesting challenges and learn something new every day, one of the strongest reasons I like working there is the people of course (well, like anywhere, most of them 🙂 ). My co-workers, in contrast to the grey cubicles, are not grey at all.. Some of my best friends today are folks I met at work, and beyond that, I keep discovering all the time how creative the people around me are, while the “geekiness” presented at work is one aspect of them, they have so many other creative aspects I love to learn about: one is a Jazz music fan that plays endlessly at home, one is a drummer, one is a talented cloth designer, one practices Judo at night, and more.

And then there’s one super talented engineer, that I live working with because above all it is always nice talking with him (and this one is not a given..), which is also a super talented photographer, and lucky for me also a savvy cook, that agreed to come visit here for some posts and share with all of us the results. Fresh homemade tasty za'atar and cashew cheese Crackers, which are also vegan and gluten free

  • ½ cup corn flour (100 g)
  • ½ cup rice flour (70 g)
  • ½ cup cashew nuts
  • ¼ cup water (plus more for soaking)
  • ½ tea spoon salt
  • 4 table spoons almond butter
  • 4 table spoons olive oil
  • 4 table spoons za'atar spice mix

  1. Soak the cashew nuts in boiled water for 10 minutes. Drain from water and place in the blender with the ¼ cup water and ½ tea spoon salt until it reaches a smooth cream cheese like texture.
  2. Mix in one bowl the dry ingredients: ½ cup corn flour, ½ cup rice flour, and 4 table spoons za'atar spice mix.
  3. Mix in a separate bowl the wet ingredients: the cashew cheese, 4 table spoons almond butter, and 4 table spoons olive oil.
  4. Combine the wet into the dry, mix a bit and start working with your hands to knead the dough until all is combined, and create a ball from it. Place the dough on a piece of parchment paper, place a second piece of parchment paper on the dough, working from the center of the dough out, roll the dough into a rectangle roughly ⅛-inch thick or thinner. Using a pizza cutter or a sharp knife, cut the dough into individual crackers roughly 1-inch by 2-inches. Alternatively, cut the crackers into squares, diamonds, or use cookie cutters.
  5. Bake in an oven pre-heated to 170 C for about 20 minutes (until you see the edges start to brown). Take out of the oven, and let cool. The crackers will crisp further as they cool. Store the crackers in an airtight container on the counter.
